This summer there was a post about a hamburger summer sausage recipe right out of grandma's cook book. I smoked 10 lbs of this recipe. Every body was crazy for it. I wrote down the recipe but now I can't find it. Does anybody have a link or the recipe? Please?
HAHA! Stretching my leg? You will have some high heat. Unfortunately you can't turn off one of the burners. Personally I think it makes a better grill/oven than smoker. I'm eventually gonna swap out the burners for a single one. Cheaper than buying a different smoker. Or make a bigger burn pan...
Thanks All! I'm thawing out about 5lbs of my own deer meat and try sticks again. I always trim all the fat off my timber goats. So should I add about a 1/2 lb of ground pork or just go straight deer for sticks?
I was given some locker deer burger (8lbs), so I decided to smoke some deer sticks. My 1st time.
1hr at 140, -2hrs at 150-about 2 1/2hrs at 160 when it hit 155. I then cooled them in ice water for 10 minutes. I let them dry overnite in the smoker.

Thanks guys for responding! I ordered using Weston #8 HD gears. I checked the gears again and found I needed 2 after all. 33$ and change. I'll report back and let all know if they interchange with DAC grinder or not.
Hey all! I was given a DAC EMP-2SS meat grinder. It has a stripped worm drive gear, the bottom one. I'll be danged if I can find a replacement. It's supposed to be the same as a Weston #8 grinder (not the Butcher model). I can't find a picture of that gear to see if they match. Any Idees?
I get some charcoal lit and then use it to ignite the wood chips. Iturn the gas down to regulate my heat but I still have to keep my bottom door open a little to use it as a regulator also. Sometimes I just stick a pan of chips right on top of the burners and let it smoke. The doors have seals...
