If something broke like mine and Pending on when you bought it you could return it or have LEM send out a replacement gear box under warranty. If out of warranty I think it was $100 for a new gear box
The current software fix they were investigating is that the auto retract that occurs for two seconds after the pedal is released would not happen unless the foot pedal was pressed for at least three seconds such that the piston would have gone down enough to allow for the two second retract...
Not sure if my post that you quoted above was updated after I talked to LEM but the issue of the piston going up beyond the top limit switch is a known defect when u momentarily press the foot pedal at the start of the stroke, not a setup failure. They are working on a software fix and I would...
Hello Thirdeye,
Can you confirm which of the recipes are correct for a 3 lb batch? The one at the top listing measurements for a 3 lb batch shows 3 TBSP of Corn syrup and 2 tsp of Liquid Smoke but in your weight metrics table that follows, these same amounts are shown for the 5 lb batch. Just...
FYI to others reading this post I did confirm with LEM that this is a known issue in that if the piston is up and pedal is momentarily pressed it will try and force the piston up for two seconds and they are working on a fix for new models. Please beware or the gear could get damaged.
Must be a new program feature - little I used it it seemed to work but not sure I actually want it to do that all the time. Anyway wonder if the use condition described where piston is still at the top and foot petal was momentarily pressed would try to force the piston higher than designed. I...
Pushok2018 or Bill Ace 350 - How have your motorized stuffers held up over time and how many times have you used it? I just posted the following looking for reliability input as mine broke after one use. Any inputs in you have in the following post would be helpful: Link is here and copied...
Looking for long-term reliability experience of those using the LEM Motorized Big Bite Sausage Stuffers. I purchased the 30lb model and the gear teeth broke after the 2nd 5 lb batch of meat was started. The motor was defaulting out so I took the motor off and tried to hand crack the gear rod...
Thanks tallbm - I don’t plan on normally doing 5lb batches just to figure out what recipes I like and once I land on one plan on typically doing 20 lb batches. Your feedback is what I would have expected.
Just curious if anyone experimented with making smaller batches of different types of recipes and putting into a stuffer at the same time in layers? I have a 30 lb electric stuffer and like to make 5 lb batches to try different things up and it takes a lot of time bringing up the plunger each...
Thanks for the continued
Part of the reason I go through the effort to make my own sausage is to know what is going into it for the meat and seasonings. Most pre-made seasonings have some ingredients you cannot pronounce or they are preservatives which I prefer to avoid. Others better than...
I am just starting to make my own but as stated above I purchased the pizza brats at the time and was looking to replicate and was just looking for a recipe if anyone had one
Unfortunately I only had them once about a year ago and the store stopped selling them. I recall them tasting like a bratwurst with a pizza flavor and surprised how good they were. They were more red than normal so not sure if that was seasoning, sauce or just coloring to make them look...
Hello - Does anyone have a pizza bratwurst sausage recipe that they would recommend. A local grocery store used to sell but no longer does and I would really like to make my own. I found Excalibur seasonings sells a pre-made kit but I would prefer to make from my own seasoning and I really have...
Smokenharley - thanks for the input. You mentioned some of your most liked snack sticks you make with cheese. Have you made any of your skinless wieners with cheese as well? I would expect that cheese in a skinless dog would not work out well as any cheese at the surface would just melt...
smokenharley,
have a couple of follow-up questions on your various posts:
I have not used, but have read about the sous vide process. When you stated, "Sous Vide to 147F for 55 minutes", does that mean that you use the sous vide device to bring the water temperature up to 147°F and then...
