Yes it makes a lot of sense if you don't have water in the pan ...The makers of Backwoods smoker would say why did you buy a water smoker if you're not going to put water in it..lol... But yes we all experiment to get more bark so we add less water or sand to maintain a temperature below 250...
Two more things to watch for ... The ash pan you need to empty every time you add more charcoal otherwise the hot ash below will lite up the entire charcoal basket n that definitely increase your heat to 300 degrees...
And as for not being able to get the temperature to 250 I had that problem...
I only cook for my family n friends 2 parties a year 70 guest... Plus I do some smoking for my friends parties once in while.. Doing so I want the best for my needs n right now it's the Yoder YS1500
I just upgraded to the Yoder YS1500 .. Now my only problem I have to hide the Yoder over at my friends garage, until I sell my Backwoods G2 Party that way my wife won't freak out on me :)
