I have been interested in using rubs on my smoked cheese. I'd like to know what you use/add to your cheese, when you add it, how you add it, and if using binders - what do you use?
I am confused as to whether to get the cheese to room temp, then apply rub

Unfortunately, I didn't. Had some issues crop up at home that needed attention, so the pulled pork was used for quickie dinners (sammiches) instead. Next batch I make will have some of it going into pasta using these wonderful ideas
Thank you! Do you believe cream cheese, in a small amount mixed with another, harder cheese, would do better? And I see your point as sweet potato can already be creamy, so no need to overdo it :-)
I could try that, definitely. I am not used to making my own pasta, so I am not sure how to keep it sticking together in a fry situation. I'd probably want to coat the outside as well. Good idea to investigate, though :-)

I have wanted to get into serious smoking for YEARS. I did some smoking on my gas grill...
I have been using the Kamado Joe lump charcoal. I get mine delivered from Amazon. I haven't yet tried any other, so I can't help on that end, but I find the KJ works well for me and not a lot of distorted flavoring that I hear others experience from some brands
