    Smoker build in process

I haven't been here in a while and haven't got to keep up with the forum, but here is what I have been working on this week. I decided to build a barrel smoker. I used a 55 gal. for the smoke chamber/grill and a 35 gal. for the fire box. This is what I have done so far.

    Brisket Question

I just picked up a half of beef from the butchers shop and had a brisket cut for me. I was expecting more than what I got. I got 2 pieces that weigh about 2 1/2 pounds each. They are about a foot square and about 1 1/2 inches thick. I have read several posts about smoking briskets and they seem...

    Propane burner in fire box

Has anyone ever used a burner from a turkey fryer and install it in a side fire box to use on longer smokes? Just wandering if it would hurt anything to use the one from my fryer along with wood chunks for smoking. Just a thought.

    Mopping or Spritzing

I use a rope style mop on my smokes, I have a hard time trying to clean it after uses. Is it better to spritz with a squirt bottle or to mop? Is there advantages to mopping versus spritzing? Just a small thing but I know it makes a big difference.

I know everyone usually talks about smoking butts, loins, briskets, turkeys, roasts, etc. I was wandering if burgers are to easy and a little off the beaten path for discussion here. Chicken Wings

A great snicky snack from the old smoker is some good chicken wings. We always have a Daytona 500 party and always have done Hot Wings in the past, even done Buzzard Wings(turkey). Last year I smoked some wings and they went over very well. I dumped some rub in a zip lock and with the wings...
