    Anytime you have an option to keep the smoker out of the elements I would go that route. I keep my offset in side and it looks great. At minimum keep it off the ground with bricks or some sort of stand.

    I did take that into consideration, I believe my seasoning was the culprit You would have liked these then!! I didn't know that, I will have to give it a try. I have never had an issue the the regular Tony C's until i coated the steak and also put it in the butter that topped the steak.
