Anytime you have an option to keep the smoker out of the elements I would go that route. I keep my offset in side and it looks great. At minimum keep it off the ground with bricks or some sort of stand.
Thanks everyone this was an easy one too. I usually do this chicken where I slice a pocket in them and stuff the bacon and cheese in. This way was much better and a whole lot less prep.

I didn't know that, I will have to give it a try. I have never had an issue the the regular Tony C's until i coated the steak and also put it in the butter that topped the steak.
