Not much to update. I pressure tested the water lines and ended up having to tighten all of the tankless water heater connections. I’m always leery of over tightening when I go from PVC to metal fittings. I also now have all the thermocouples, wall jacks, touch screen, etc for the monitoring and...

A steak by any other name.....

johnl..... I cooked more this evening. Only downside is that unless you have numerous rotisserie’s it’s really like long term snacking. Haha... you slice off a few thin pieces, season, put it back on the grill. And repeat over and over. But wow is it delicious..

Took this with my phone at about 200 yards so the quality is lacking. The spring season is almost here! Made some progress yesterday. Got the obligatory auto towel dispenser installed. haha Got more wiring run but still have more to go. Seems like whenever I think I’ve made all my runs I...

Thanks! I appreciate the info and the compliment. I imagine a lot of trial and error, a fairly steep learning curve, and a lot of questions posted here!

Love to smoke but can't eat after?

Happens to me all the time when I’m cooking for more than say 4 people. It sure what it is but by the time time I’m done preparing the meal, not just grilling, I’m not hungry.

Ohhhhh. Gotcha, I figured R30 will suffice since it won’t ever be a dedicated cooler and only used for short term refrigeration. The Coolbot set up I will be running should allow me to maintain mid 30’s. By short term I’m talking a couple months at most if I decide to age beef. Thanks for the...

nanuk- I’m not sure what you mean by “double 2x4 studs offset.” I’ve got 2x6 framing throughout and am using 5 layers of 1” rigid foam on walls and ceilings which gives me an R30 w/out the OSB and cedar siding. As far as the bottom plate I didn’t consider rigid foam underneath due to it not...

Thank you! I need to start sourcing heritage breed pork bellies and hams. I have an endless supply of venison on my place I can hunt year round so have jerky, buck sticks, sausage, and such covered. Ive read that many on here have been pleased with subprimals from Costco and will begin checking...

    First butt in progress

I’m far from being an expert on this but I do recall that the probe should not touch the bone. From what I understand the bone, especially if any of it is exposed, can act like a heat sink and transfer heat more so than the surrounding meat which could give you a false reading.

Had another break in the weather yesterday. Was able to get the facia and roof on. Next step is gutters, soffit, and trim. Then finish the interior, install the AC and Coolbot, hook up the firebox, and smoke! I’ve had a slight delay on in getting the insulation completed due to still...

A beautiful day here in the hill country. Sunny, slight breeze, high in the low 70’s..... and I actually got a few things accomplished other than cruising the aisles of HD. This pic is the before- And this is after installing the water heater. Lots of joints! I was also able to get a few...

    Walk-in Smokehouse in Progress

Made a little progress yesterday. All four sides are now having siding and I can start installing electrical boxes. This may sound odd but I felt like the most progress was made when I cut out the bottom plate threshold. Haha I’m going to wait to install the battens and trim until the very...

    New mini smoker build

Nice job! Are you sure it’s stout enough? Might be a little iffy 10 generations from now. Haha This might work for you: Keep extra-hot exhaust manifolds, headers looking extra sleek with Rust-Oleum® Automotive High Heat Spray. This flat, protective enamel bonds to bare metal and withstands...

Thank you! I’m really excited to have it dried in so that I can continue no matter what the weather happens to be. Plus there’s lots of different things that need to be done so it keeps it interesting.

Finally got a short (4 hours) break in the weather yesterday and was able to get the project dried in. Just barely. Got the paper on the deck and it started to rain again. This afternoon I put the siding on the skinning rack side and installed the breaker box. Then I installed LED...

A steak by any other name.....

I’m a huge proponent of the Paleo diet plan. Translation- I eat red meat. Lots of it. Unabashed. No apologies or concerns. I’m going to die of something at some point. It won’t be from lack of protein. I’m a frequent guest of Brazilian steakhouses and decided to try some of my favorite...
