We cook chops, loins etc to that temp. But steaks are cut from the butt and there is too much fat to render at that temp. They end up very chewy and gross.

In 3 years I have never had a flame out. Just run the tank at maybe 1/2 to 3/4 of a turn open, never more than that. I run the top vent all the way open and run the bottom vents half open to all the way shut depending on weather, etc. I have smoked in cold, wind, and heat and never had issues...

I let them ride on smoke (170-200) for 2 hours. Then 250 for 30 minutes. Then 350 for another 30 minutes till they hit IT. I just put them tented in foil to rest afterwards.
