Smoked Pork Steaks with Monroe County Vinegar Dip

We cook chops, loins etc to that temp. But steaks are cut from the butt and there is too much fat to render at that temp. They end up very chewy and gross.

Dusted off the WSM 18" for the 4th.

Anytime! Should mention I have the 18inch. You have to cut full slabs of spares in half. A smaller slab of baby Backs will fit diagonally.

    SPOG and Jerk Spatchcocks

Thanks, y'all! I need to use a better camera. Yeah the peaches were naked. They have enough sugar by themselves. I bet a spicy seasoning would be good too.

    SPOG and Jerk Spatchcocks

Brined one of these but didn't have space for the other. One rubbed down with Badia Jerk and black pepper, the other with SPOG and rosemary. Into the Pit Boss at 300 for a couple hours. Finished off at 400 then with some veggie and peach skewers. Sorry no played pic it got demolished fast! That...

Dusted off the WSM 18" for the 4th.

In 3 years I have never had a flame out. Just run the tank at maybe 1/2 to 3/4 of a turn open, never more than that. I run the top vent all the way open and run the bottom vents half open to all the way shut depending on weather, etc. I have smoked in cold, wind, and heat and never had issues...

Smoked Pork Steaks with Monroe County Vinegar Dip

Thanks again everyone! I think it would make an exceptional PP finishing sauce. Just be careful, it is hot!! I let them ride on smoke (170-200) for 2 hours. Then 250 for 30 minutes. Then 350 for another 30 minutes till they hit IT. I just put them tented in foil to rest afterwards.

Smoked Pork Steaks with Monroe County Vinegar Dip

Watched a video on YouTube the other day about the Kentucky BBQ trail and they were grilling pork steaks over hickory and then dipping them in a hot vinegar sauce. I rubbed down with Jeff's rub, then smoked on the Pit Boss to about 160 IT. Then cranked the temp to 350 until they hit 185. We...

Smoked and Braised Carnitas! HEAVY Q-VIEW

Definitely. Had a nice beery/citrusy flavor to it. There is some room for improvement I believe, but it certainly wasn't bland.

Plate of Summer on the Pit Boss

Haha yeah she does a great job! When I ran just the propane smoker she wouldn't touch it. But the pellet smoker is so versatile and easy to use.

Tenderloins and Taters on the Pit Boss

My wife baked up some delicious potato/sweet potato fries on the Pit boss tonight while I seared 2 tenderloins over the open flame, then shut it and let them ride at 400 until IT hit 135-138. Boy was it good! Also plated with some delicious fresh from the neighbors garden green beans with...
