Definately all good info. even though I am not thinking of entering a competition any time soon. I will come back to this post time and time again as a guideline for when I visit a competition and eventually enter one. thanks for sharing your expertice with us Noah.

Iguess thyats what I've been doing is letting the meat sit out before I put it on the smoker. Don't know where I got that fromBut from what I read is that it is safer for the meat. BUUUUUT if I take it right from the fridge and it takes longer to cook it is more probable that I will get more...
when I smoke my meat I don't get too much smoke penetration what could be the cause of this? To much dry rub? Cooking to fast?? And how thick does your smoke penetrate into your meat.
just got my thermometer in the mail.should be a good one. I got Remote Check by Maverick from Amazon. It has a double probe. I'm going to use one in my meat and the other to tell me what the temp of my smoker is. The transmitter and reciever are the ones that send and recieve the transmission...
