Well..... Our Q is a total disaster. Woke up this morning at 4 am to get half of the chickens on the smoker. They came out OK, a little over done, but I can deal with that. Put the other 5 chickens on and the wind kicked up and I cant get the smoker above 168...... So I am having to move 4 of...
Cajun.... Thanks for the follow up.... I am looking at building a smokehouse this summer and was looking to use propane. I will buy a turkey burner and the TCV......

After reading it maked total sense.... I don't know if I would go to the extent of making a bunker like this guy did, but I live in the boonies and the closest house is about 2...
Here is the one I use (with a little modification) I use apple cherry juice
2 quarts apple juice
1 lb brown sugar
1 cup kosher salt
3 quarts water
3 oranges, quartered
4 ounces fresh ginger, thinly sliced
15 whole cloves
6 bay leaves
6 cloves garlic, crushed
I let it soak for 5 1/2...
I am going to make more tonight or tomorrow night but I think I am going to try and use wood chunks to see if they will smoke without catching on fire....
I will let you know how it turns out...

Gortiz.... Did you brine first? I just did my first 2 chickens last weekend and brined them for about 5 1/2 hours prior to smoking and they were out of this world.......

I will get some pics of the mod... I will try and get the baffle mod done before this weekend. I am doing 8 chickens. The last batch I did, the side of the chicken that was closest to the firebox was darker then I would have liked it.......

As of now I am having 30 people over for a BBQ and UFC pay per view on Saturday... Going to smoke 6 or 7 Beer can chickens..... along with some Brats and burgers......

Just got done smoking some cheese. Colby Jack, Pepper Jack, Swiss and Extra Sharp Cheddar. All went well.. I have a side by side Brinkmann and all that I did was used my electric charcoal starter and put the smoking chips right on top of it. Plugged it in and let it start smoking... I...
