    Coconut Jerk Chicken Thighs

Thanks Brian! Hope to get back to creating and cooking someday. I noticed I have a couple bags of my pulled pork using this and some extra sauce in the freezer.

Smoking 1/2lb Burger & Holding temps

Holding hot foods is typically at 135F - 140F. Finish temp to shoot for depends on desired doneness. While I might cook mine to 150ish if I were serving that many people I'd likely stick to the recommended 165

Smoking 1/2lb Burger & Holding temps

I smoke at a higher temp like 275-300 on the Lang and don't find the need to reverse sear. They take on a ton of smoke with a nice big smoke ring and are good on the outside. Add cheese at the end and it really takes on the smoke in minutes too. Here are some I did. I've done larger ones too...

    Video games?

Finally decided to buy Baldurs Gate 3. Hesitated for a long time due to its top down perspective and point and click movement. They now have a mod to remap it to a free camera and WSAD movement. Got it up and running that way. Man it's beautiful but the learning curve is steep. I think I'll...

    What are you watching ?

I watched it last night after seeing it mentioned here. It kept me engaged the entire time. I'd give it a solid 7. I was also surprised at the end it was based on true events.

It did it again… smoker failed mid session. Throw in oven or throw in trash? (Internal 110°)

Hot and fast is the way to go on butts for sure. I'm team 275 up to the wrap and 300 after.

A dozen broiled lobster for Christmas Dinner

That's a whole lot of delicious! I had planned on a seafood meal having bought a one lbs can of lump crab claw meat and having a nice big salmon filet. Had a great recipe to try with a creamy crab topping on the salmon. I didn't realize the can of crab needed to be refrigerated so in the trash...

Well, after all of these years, I finally did it.

Beautiful truck! Congrats! I'm still figuring out things on my 23 Colorado Z71. I have decided I love adaptive cruise and blind spot alerts. Took me awhile and I still hover over the brake if nearing a vehicle but it has worked flawlessly.
