I want to know how you smoke that much meat at one time without overwhelming the heater. You say you do 8 butts, 60lbs, How long does your unit take to come up to the cooking set point of say 225 degrees? Do you have a temp probe? I find with only 4 butts/40 lbs my (40") MES struggles for many...
I agree. Mine looks just like your pic. I don't even have an elbow, the box is very close to and straight in to the wood chip hole. Since the mod, I only have creosote in the mailbox itself.
Do you put your amazen on the bottom of the mailbox or elevate it?
Do you have any holes cut for airflow?
Me too! Get this and toss those wood pieces :) Fits right in my Gen1, made a small notch on the bottom to allow room for the draft lever to protrude.

I understand now. My turkey tin might be a little bigger. It is sort of oval shaped. I folded the rim edges up to square it a bit, covered the top of it with foil, then pressed on the center of the foil to to indent it, where I also cut about a 2" hole. The grease hits the foil, and drips down...
dr,
Had to tell you how nice the turkey tray worked out for me. My Gen1 drains its grease out to a bucket set up behind it. With your method, nothing even hit the bottom tray! The MB tray is to ovalish, and no matter how much foil i wrap it in, it all ways gets under it. I especially like how...
I hope you don't mean you are leaving the meat at room temperature for 4-6 hours, that would be a real bad idea! The surface temperatures would be in the bacterial danger zone for far too long.
@dr k,
I tried the element flip long ago, it didn't work out so well for me. Based on your post, I...
How long does it take to cook 8 butts? How long till the box is cycling on thermostat? The reason I ask is that 4 butts is my maximum in my MES40 mainly because the box can not get to 225 for a long time when stuffed with so much cold meat. 8 Butts in my area is 65-80 lbs. That is a huge thermal...
Well I wouldn't have used a saw if there was an access panel ;)
The element has a panel, I would a hook up a volt meter to the element and watch what happens.
You might not even have too if you see cooked connectors on the element.
I just had similar problem with my MES 40. It turned out to be the high temperature limit snap disk. One of the rivets that hold the spade lugs on was loose. It was discolored dark. At temp the connection became intermittent. I used a hole saw to cut my back cover open to replace it.
Not really, its nothing proprietary.
Here's some details:
The Esp8266 I use is a micro controller with built in Wifi. It runs at 3.3 volts. The board has a linear regulator.
The Microchip part is the 12 bit spi A/D, it is not the controller. There also 2 quad op amps for buffering, along with...
I have the circuit mostly laid out on a PCB, but I haven't had any fabricated yet. There didn't seem to be too much interest. I might put it up on Github, but it seems like not too many smoking meat guys are into coding. My first idea was to make a kit.
From what I have seen since I designed...
Ahh! now I understand the concern.
I was not aware the lower pcb was not serviceable. I just checked mine, and there are rivets not screws :(
However I do have a drill :) The question is this: Can that lower PCB be removed at all?
If so, it can be repaired. It is a very simple circuit...
Kurt,
I am not sure I understand maybe I confused things in my explanation. I clarify:
There are two boards in each smoker, the power board, located on the bottom and the control board located on the top. My project replaces completely the top control board. The lower board is not affected in...
Thanks!
Yes it plugs directly on to the existing connector on top. The old controller is removed and not used anymore.
There is no surgery of wiring. On that subject, from what I have read here, there are many unnecessary surgeries being performed! It turns out all you need to do to use the...
Since 2 lcd have no display, it sounds very likely the 5 volt supply is down. The thermal cut off would not matter.
In the last TallBM post http://www.smokingmeatforums.com/t/63863/masterbuilt-not-working-properly/160#post_1676242 you can see the power supply module. The three terminal device...
My MES40 gen1 temps were allways a good 20 degrees low, oven could not make 275. I was tired of staying tethered to my smoker. I was tired of only having one meat probe. I decided to make a new controller, to replace the old controller completely. It is working and usable right now. I have...
