I'm from NSW Hunter region our butchers here aren't up to the cuts of meat needed for smoking but are slowly getting there I source mine from local farmers great beef and pork.
Just started to get into smoking there's not a lot down under so I'm hoping to learn a few things and get more people down here into it I've started with a char griller pro with a sfd just cured it today and it went well can't wait to smoke my first brisket
