    Could the flavoring issue be due to the high fat content in the prime brisket? I don't think the fat takes on much flavor.

    Just finished my first smoker build (for now) with a 250 gallon air compressor reverse flow build for home. The CC is 30" W x 76"L with a 1/4" wall thickness. The fire box is a little undersized but it is 22"x22"x22" 3/8" plate. The frame is made from 2" tube stock. Chimney is 3 1/2" schedule 80...
