    I have had pretty good luck with the Traeger mesquite chips I started using a few weeks back.  They may not be the best brand to use, but they will last quite a while, compared to the 5 pound bag of wood chips I used before.

    I did BBs over the weekend and did a 3-2 and then let them rest for 2 hours. They were perfect!

    I've done quite a bit of smoking over the long weekend and am looking forward to trying the Amazen pellets. Getting pretty tired of loading chips and dumping the tray. For those who have used pellets for a while, how economical are the pellets vs chips?

    I only rested mine for 30 minutes, in beef broth, and it came out fine but not quite as tender as I thought it would be. If I had let it rest for an hour or more would it have been more tender?

The only things I did different were, when transferring to the foil pan I had 2 cans of preheated broth in the pan and then covered it tightly with tin foil. Back in the smoker and pulled it at 195.     Brined checked legs

    Well, I didn't do all 24, only 12.  Brined for only 2 hours and put rub on for about an hour.  Heat set at 250 and cooled until thermometer said 165.  Should have gone to 170 or so because the one that I ate was a bit red near the bone, but still tasted great.

    Brined checked legs

    I am going to brine 24 chicken thighs with the slaughterhouse brine recipe for 6 hours or so and smoke them later on today. Hope yours turns out great!

    I just grabbed a can of water-proofing spray I had laying around the we bought for shoes. Wetted the top of the cover with it an hour later it rained. Water puddled on the top but did not go through.

    I am new to smoking, but a coworker just purchase a Masterbuilt and loves it, so I am doing research to see which one I should purchase.  I am leaning toward the Masterbuilt 20070213.  Any input would be greatly appreciated!
