    No I wouldn't recommend using these with liquids since they are fabric. I would not expect them to be waterproof. If you need waterproof you'll definitely want to go the silicone route.

    I'm sure I can find it with a Google search, but I was curious as to what's the difference between your jowl bacon and guanciale? The seasoning/cure? Or are they essentially the same thing?

    Dry brine question

    I typically just use kosher salt the day before then hit it with pepper right before cooking it. Also I put the steaks on an elevated rack to help dry out the outer edge of the meat so you can get a really nice crust when you sear it.

    Thanks everyone for all the compliments. I didn't think the pictures turned out very well but the lollipops were very good. I'll try my friend's advice about cleaning the fat off the skin and do an update to see how much crisper the skin gets.
