That is great advice. I really do not have much faith in the meat temp. probe that is built into the Masterbuilt. I always was using a separate temp. probe for meat temp.

I never leave the smoker unattended and due to OCD am constantly checking temp. I wasn't sure if anyone uses the 2 probe Auber Model: WSD-1200GPH . Thanks
Anybody using a dual probe Auger PID for the MES40 Gen 2 instead of the single probe? Seems the 2nd probe on this unit , Model: WSD-1200GPH , may be useful to monitor internal temp of the food at the same time vs. using a maverick probe for the food?
I have little faith in Masterbuilt smokers right now. At least this model. Support direct from Masterbuilt used to be good when I had a question. Not no more, I would have been better buying an apartment size 120 volt electric oven and cutting a hole in the side for the mailbox mod. with pellets.
I think I came acrossed a forum topic in the past where a re-wire was done that eliminated the control temp setting and monitoring since it was handled by the Auber. Not sure if it kept the over temp safety function active or not. Not that I have a lot of faith left in that over temp. button...

All I am trying to find out is if there is a way to calibrate the temp on this smoker. I have searched the manual, support question, forums, etc. with no luck.
The internal temp of the unit is running 23 to 25 degrees lower than the actual displayed/ set...
Vented mine with 3" stove pipe through the concrete block wall. Only issue I get is on a windy day, the wind will blow the smoke back into the mailbox mod. I have. Trying to come upwith a solution for that. Maybe some sort of back draft damper?

I just remembered that the water bowl was empty during the pre-season of the smoker and I had all that white billowing smoke then also. The AMNPS defiantly looks like the way to go. The whole purpose of buying an electric smoker was so I did not have to babysit it during cooking...
Will the meat get dried out with no water? I don't think this was steam as the water in the bowl didn't have a chance to get hot enough before the chamber filled with heavy smoke.
