    11.5 lbs brisket and cream cheese stuffed meatballs

    I put the brisket in the smoker (MES 30" analog) at 7:15AM and the meatballs at 11:00AM. I just wrapped the brisket at 11:15AM, it was at 158 Internal temp. according to Maverick.

    Today I'm cooking some pork butts and I threw in some beef short ribs. Both got Jeff's rub. and have been in for about 5 1/2 hours. I got the A-MAZE-N-TUBE-SMOKER filled with Pitmaster's Choice-Hickory/Cherry/Maple pellets.

    Tri-tip smoke

    Got a TT going in the smoker. Used a whatsthisheresauce brown sugar paste then some of Jeff's Texas rub. Before it went in I just seared it on the grill. Next pic will be after a rest and ready to eat.

    Pork in the smoke.

    More corned beef

    I threw on some corned beef to try and make some pulled corned beef. Pulled it For supper I had some eggs, corned beef hash and broccoli. It was pretty good.

    Corned beef flat

    I have a corned beef flat in the smoker. Got it up to 160* and covered it with foil with some apple juice and the juice that came in the package. Kind of over paid but it was hard to find and my wife wanted some to make corned beef and cabbage wraps.

    Ribeye roast

    I have a Ribeye roast in the smoke. I pulled it out at 138* IT. It is resting right now. It is boneless so no ribs (Bear they did not have it with the bone in ) but it looked good so I got it.

    Pork-Buffalo meatloaf outside pulled Butt and pineapple inside.

    Turkey trial

    Started a turkey today at 9:00am at 230* in my electric MES30. I had it in brine for 2 days in the frig. At 1:00pm it was 144* IT. I covered it and set the temp. up to 250*.     Beef liver

    I tried to smoke some beef liver stuffed with mashed potatoes and bacon and topped with onions. It was ok but it needed more bacon. Next time I'll put bacon on the top also. I really like liver and how it is cooked makes a big difference. I used hunt in AZ and there is nothing like fresh elk...
