I prepped a 9 1/2 pound pork butt Thursday night, wrapped it up and put it in the fridge. Prepped the smoker yesterday morning and stuck it in at 9am, at 11pm it had finally reached 165 deg so I wrapped it and stuck it in the oven to finish. So here I sit at 7;45 in the morning still...
Loking through the master built xl mods thread and came up with this. Any thoughts if this might work better? Airflow seems to be causing charcoaling but seems like this is really close to the flame. Any suggestions would be great.
Just bought a Master Forge upright smoker yesterday and have 2 pork butts smokin right now as an experiment. Plan on modifying it before the next smoke withe the door seal and modifying the water pan. I'll post a pic in about 6 hours
