Bought the recipe for Jeff's rub awhile back back but never got around to using it until this weekend on some bone in chicken breasts.

So while shopping for stuff for the fourth I found some turkey legs on sale so I decided to buy them,I just need some tips on how to smoke them
like what kind off wood do they need a brine etc... I will be using Royal Oak lump charcoal in a modded ECB. Thanks in advanced.
I felt like eating some steak today So I went down to Safeway to see what they had and found some steaks for $3.50 a piece needless to say I picked some up. I cooked them over some Stubs natural charcoal that I got for half off at Lowes because it was a busted bag.

So Yesterday well looking at garage sales for parts to build my UDS I found a ECB for Five Dollars because it is missing the water pan,
my question is can you use any kind of pan as the water pan or I do I have to order the one from the Brinkman website?
So I have decided to build a UDS and I was wondering what is the easiest way to make a charcoal basket for it without having to weld.

Found this place the other day when I was looking for info on making ribs. Dont have a smoker yet but I was looking at this one.
Anbody here ever own one and if so how did you like it.
