I just received my horizon smoker. It has a convection plate in it. And I have slid it around trying to find the right spot for even cooking. The best I can come up with is 20 degree dif from side to side is that to much? I would like it to be in the 5-10 mark. But can't figure it out. Any tips...

Is there a preferred size to smoke. My butcher has 7-8# butts. But with just the family I asked him to cut down to around the 5# mark. Is that to small? I realize the cook will not take as long. But are there any other factors when cooking a smaller piece of meat? Thanks
