I was talking to friend the other day about smoking meat and they asked how bad is it for you, aside from the fat and calories. I said, well you are ingesting the byproducts of combustion so I assume that might be considered carcinogenic. I did some Google searches and really did not come up...
Fired up the UDS double drum today. Good smoke, ran 8 hours, smoked wings, thighs, ribs, and pulled pork (5lb butt). She ran great. We had a few unsuccessful attempts when we first built her, but we have tamed the beast!
I'm smoking with a double barrel UDS smoker and I am still learning how to control it precisely. I have smoked plenty before using a MES with great... No awesome results. I'm a little bummed about what's coming out of the UDS. The food has a very strong bitter taste. I'm assuming it's creosote...
She is sweet. Held 230 with no problems at all. She has all the bells and whistles. Many build hours from a good friend and a little ingenuity made a real nice smoker.
