Made my first ABT's and a Fatty. The ABT's were real good and I think I ate too many. By the time the Faffy was done I was over my limit on the bacon already and well.........

Since I have the smoker up and at temp from the other I cooked I figured I would go ahead and try something else in it(only way to learn is to do it). I have a simple 3.5# packaged brisket in the frig I want to try. Can you put me in the ballpark with temp and a time per pound?......Thanks
Is there a different probe that I could p/u for my unit. Mine is a dial but it seems it would be easier if I had one either with numbers or a digital setup.
