Finally got it down...a butt the whole family wants
I love anything smoked. I'm usually tinkering with my rub, finishing sauce etc..The last two I have done my wife has loved it and so has the rest of her family. I found cutting it like this increases my bark surface. Coated in molasses, a pretty basic rub I make, pit master choice A-maze... -

Danger zone question......Bummed!
Big party this afternoon. I put a rather large shoulder (11lbs) in my MES 30 last night around 10:30. I woke up around 4 am and inserted the thermometer and in three different spots it was only 130-132 degrees. Is it destined for the trash? -
