One month in and all I can say is I think I love my Backyard Best. This is by far the easiest smoker I have ever used and I started on a Masterbuit electric smoker. It holds a ton of food and I can have it up and running in less that 30 minutes. I have nothing but good things to say about...
Well this smoke was almost ruined by the butcher not putting the hog in the walk in to defrost. I had to give it a cold water bath overnight to defrost and that caused other issues.
Finally got it defrosted and a little seasoned had to inject right before i put it on the pit.
This little...

Hello it has been 10 years since I logged on but my heart has always been in smoking meat. This is ECTO1: OTBS #237 10 years ago work moved me and between family issues and long work days I just have not been online as much as I wanted. For those of you if there are any that remember me I...
Like the title says I have always wanted one not sure why i guess it is because it seems to be the essential charcoal grill. It is an American icon in my opinion and from what I have read the best buy for your money. Well years and years of well that is kinda pricey when I have three UDS...

OK here in Texas it is no secret that we are very fond of out brisket. As much as I enjoy burnt ends and sauce nothing beats a good salt and pepper brisket slow smoked.

OK I always see the word pit-master thrown around and in my opinion we are all masters of our own pits. Well today I think I mastered another mans pit. A friend of mine asked me to cook for his kids birthday party and I said sure then he said lets cook enough for 50 people and I said no...
My kids are up visiting family and the wife and I were sitting at the house. We are coming up on 10 years married so she suggested we take a little get away and go on a trip. Then she suggested we hit up some of the historic Texas BBQ joints in the Hill Country and like always I knew I married...
Well folks it has been just over a year since I started me new job. The good thing is I love it and it is much better money than teaching. The downside it I don't have near as much time for cooking but today we are making some time. I am going to walk through this one as the day goes by with...
Introducing Smoking "Trigger" Garcia...named after the Godfather himself. Well the kids picked Trigger and I added the rest.
