shipping cheese
I have a good friend in CT that always mails me great Christmas packages of cookies or something his wife makes. I wanted to smoke a couple blocks of cheese and send them to him. Not sure it's a good idea to pack into a flat rate box and priority mail? Any thoughts? I wouldn't want to do it...- squirt

Anybody located within an hour of Emmitsburg MD the Jubilee foods has dino bones for $0.99/lb. I stopped in yesterday for some chuck roasts and saw these on sale. Couldn't resist. They were whole slabs, cut in half, 2 halves per pack, vacuum packed and frozen. One pack was about $8. I got... -
smoked rockfish
caught a limit of good eatin' sized rockfish (striped bass) this weekend on the Chesapeake. Kept 2 whole for the smoker. I ended up just scaling and filleting them and brined them in 2 cups water, 1/2 cup sugar and 1/4 cup salt for about an hour. Got the ECB fired up and threw the fillets on... -

Anybody see the Food Network All-Star Grillfest South Beach on Sat. night? Alton Brown smoked shrimp in a stainless steel bowl. Marathon smoke!
Well, with a lot of help from the different sections of this forum I got my CGSP modified and running for a Memorial Day picnic/birthday party for my wife. I installed the lowered smoke stack, grates and firebox basket for the smoker. All made a HUGE difference on how my late father's smoker... -
