Put this on my Big Joe at 250F Applewood and B&B lump pulled at 175 IT placed in pan covered in foil to 203F rest in cooler 2 hrs It has nice bark and good smoke flavor
I marinated with Italian dressing seasoned with stubbs chicken rub wrapped in bacon brushed with BBQ sauce and smoked @ 325 with applewood then seared to crisp up everything.
