A buddy of mine works landscaping and dropped off a few logs of hickory and a few cherry. They are green. Should I cut them into chunks before it is seasoned or should I wait until it dries?
Well I went and did it. I bought the Royal Oak heavy duty smoker from Lowes last weekend. After putting it together and seasoning it last week. Today I'm doing a rather ambitious first smoke.
1. a beer can chicken
2. a pastrami
3. short ribs
4. spare ribs
5. Burnt ends.
So far so good. This...

Today I smoked a meatloaf....WOW!!!!
and a Fatty made with Italian fennel sausage stuffed with Pancetta, Italian frying peppers, onions, mushrooms and mozzarella cheese. Double WOW!!!
Both smoked for 3 hours at 300 - 325 using sugar maple and hickory. I also defrosted a couple heads...
Well the weather today was nicer than predicted, so I smoked today and can hit the links on Sunday. Everyone loved it. Thanx Dutch the sauce is awesome The Garlic came out excellent I hope it freezes well. Here are some pics.
Hi everyone, I have been reading this forum for a while and have used some of the tips and recipes from here. As a matter of fact I will be making Dutch's pork loin with Mahogany sauce. I plan on smoking a few heads of garlic at the same time. My question is; Can you freeze the garlic?
