Tried out the cure I found here and used Butterworth's syrup instead of maple, gave it a three tray smoke in my little chief with hickory chips then into the oven till internal temp was 150.
Came out pretty tasty though a little salty, next batch will be better, learnin curve and all.

Came across tis site while looking fer a Canadian bacon how to and liked what I saw here so I joined the ranks.
