    Happy 4th of July Brisket

    My local Walmart had briskets on for $1.96.lb so I grabbed an 11.7lber.  Lit my Old Country Pecos this morning and rubbed the brisket with salt and pepper only. Put it on at 6:15am. 4 hours in. Enjoy the holiday and stay safe. Joel 1 Corinthians 9:24

    Father's Day Pork Shoulder

    Put on a 9.9 lb pork shoulder on the Old Country Pecos this morning at 8.  Rubbed it with salt, pepper, onion powder, garlic powder, and paprika.     Good Friday Ribs

    Put on a full rack of ribs this morning.  Rubbed with olive oil then SPOGP.  Put them on at 11:15 at 275.  Foiled after 3hrs and cooked at 250 for 1 1/2 hrs. Came out a little over done but still delicious.  Very meaty ribs. Have a Happy Easter. 3hrs into cook.  Foiled at this point...

    Brisket Today

    Put on an 11# on this morning at 5:50am.  Salt and pepper only.  Smoked it in my Old Country Pecos for 9hrs at 250-275.  Wind was havoc on my fire. Temp fluctuated all afternoon. Took it off at IT of 202.  Came out very good.
