I am thinking of cold smoking some cheese. I have a MES30 and will use the AMNPS in a mailbox mod.
Will the AMNPS with dust stay lit without the MES being on? Is there some kind of draft needed?
I though someone on this forum had trouble with pellets staying lit without the MES being on.

I finally got around to doing a temp test to see where I am at with temps in my Daniel Boone. I used 3 third party probes and the set point was 225F. Calm day and outside temp was 65F.
Probe 1 - Therm Pro stuck through a potato

Was curious how others store the sawdust from Amazen. What kind of container do you use? I have several 1lb bags and would like to put them in something that is easy to dispense to the AMNPS. I went to The Container Store but didn't see anything that really appealed to me.

I programmed the MES to 215. When it reached 215 and shutoff, the Maverick was 248. That is a 33 degree difference between the smoker and the Maverick.

Curious as to how you route the wire for your meat probe on a Masterbuilt 30. Do you route it down through the top vent? Or do run it out the door? Wouldn't running it out the door break the seal?
