If you ever wondered why brisket at a restaurant is so expensive.

With beef production at a 75 yr low (this alone will take many years to correct) and diesel now above $6/gal in some areas, full packer pricing will continue to increase. While we can expect fuel pricing to subside after a while, resolving the beef supply is going to be a very large mountain to...

For you old muscle car nuts.

One of my friends drove his Corvair for a number of years. Pretty cool car. I loved riding in it. My 63 was a life long dream that started when it was introduced. I retired in 2013 and began the search the next year. Found one in '16 and it's resurrection was complete in Dec '20. Definitely...

    Pork Butt @245 or ???

I finally discovered what you indicated. Moved the gateway and turned it slightly and the connection improved greatly.

    Pork Butt @245 or ???

So, those two butts were stubborn. After 7 hours in smoke (6 at 265º) they were barely at 160º. I resorted to wrapping in foil and into a hot oven. Had a deadline to meet so no choice. Luckily, they both reached a little over 200º by 3:30pm and I turned the oven down to 150 until 5pm. Both...

For you old muscle car nuts.

Zora tried to keep the split window out of the design but failed. No question in use, it sucks and agree with the belief even back then that it was a safety issue. We solved the issue with the rear view mirror/monitor attached to a small camera by the license plate. Wires were run up the...

For you old muscle car nuts.

Aware of the Carlisle shows but have never been to one. Got to find one close and plan a trip for sure! Yup familiar with Coachworks. Can't say I'm that fond of their rendition of a 63 SW but that's just me. It took me almost 2 years to locate my 63 and another 4.5 years to get it in the...

    Pork Butt @245 or ???

Thanks Courtney! I'm noticing that the two RFX probes are struggling with connection a bit, they're bouncing back and forth from fair to poor. Thinking is I've got each of them sitting on racks over aluminum pans. Those two take up all the space in my MAK. Normally the connections are...

Interesting twist there Rich. Definitely going to try that on the next smoke. Thanks!

For you old muscle car nuts.

You are correct Dan, 430 LS3. Roadstershop chassis, dual set of mufflers with a switch 😆, IRS plus a bunch of comfort stuff including a rear view mirror camera setup that eliminated the terrible view you had with the split window, which is why many 63 owners back then had them replaced with the...

    Pork Butt @245 or ???

Thanks guys. Got both butts in the smoker at 5:40am. Going to run 1.5 hrs at 185º then bump it to 265º.

    Pork Butt @245 or ???

For years I’ve smoked butts at 245°. Wondering if I can get the same results at higher grate temps. What temp do others smoke at?

For you old muscle car nuts.

Takes me back a few. My first car was a stock 65 Mustang. Definitely not a speed demon. Back then I did fall in love with the 63 Split Window Corvette. Fast forward 60 years, with a 4+ year restore and upgrade, I pull this out on occasion for a drive:

Great smoke looks like the Recteq is going to perform really well for you!

If your smoking today...check the ash build up.

I do the first part religiously to ensure an auger never gets cemented in by wet pellets that decompose and turn into a brick but haven't been so good about the ash vac up front.

If your smoking today...check the ash build up.

Hadn't smoked since early July. Surely I could get at least one more smoke in before getting the ash vac out. Smoker fired up so on went the ribs for dinner. Half hour later I go an check and the temp was only 145º. Shut it down, pulled everything out and sure enough the pot had enough ash in...

    St. Louis cut weekend ribs

FYI, despite Kinder's website not showing it, I did find it on the shelf at Walmart!

A extremely rare Brisket attempt for me.

    I'm in for the reveal!

    St. Louis cut weekend ribs

Interesting, on Kinder's website the Black Cherry Chipotle BBQ - Wings & Dip sauce is no longer listed. Too bad, I would have liked to try that. There is a rub with that name though.
