I built a reverse flow from a 250 gal tank about 3 years ago and it cooks like a charm. Only 10-15° difference between the back by the fire box and the front. I spent a LOT of time designing and building. It's definitely a science to it, but I wouldn't do anything but reverse flow now
I recently tried to make smoked swineapple. It turned out great except for the bacon falling to pieces. Has anyone had this happen before and how do you prevent it. I used Wright's Applewood smoked bacon.

Ok I need to know if I'm figuring sector area or segment area and is that measured in sq in. I k ow I sound ignorant to a this but its been 20 years since I was in school and math was never my strong suit. Lol!
I have been trying to figure all my dimensions of my 250 gal build and using the feldons calculator. It says that I need 158.40 sq in for my fb/cc opening. My fb is gonna be 22x30x30, where I need help is figuring exactly what measurements are needed for my half moon opening.
