Wow , this looks so good !! as 2nd smoke asked internal temp. what smoke did you use ? time of smoking ? what are other suggestions for filling although yours sounds fabulous !
This is my first attempt at smoking ...
Jetman...did brining for us ....and leaving the smoking to me . he has to go to work ..so has handed the job to me .
Any good tips or suggestions ....such as maybe pepper or honey in the smoking process for and end flavor ?!!!

I helped Jetman make some canadian bacon ..he did most the work I was just the extra hands to help ...turned out OH so Good ...he is out of town working so I finished the slicing and packing for him. We decided this time to roll it all in pepper ,and slice it a bit thicker #5.25 on his slicer...
This was very delicious , no real citris flavor to the meat but for smoked the meat was tender and the smoke flavor was in the skin ,mellow flavor to the meat , well worth bugging Jetman to make it for us .

We gave gifts of canadian bacon ,buckboard bacon,brautwerst,smoked cheddar and peperjack cheeses , quite appreciated by my family ,gifts people love to get and sharing the wonderful delights.

took some of the Jetmans buckboard bacon and wrapped it around boneless chicken breasts very yummy smokey flavor blended with the chicken quite well .
