First time Whole Smoked Turkey - turned out pretty well!

You got it Grillmonkey .. will post pic's of the smoker and the thermometer .. December isnt "that cold" .. January, Feb. and March are ugly here - not sure I would fire up the smoker at 40 below .. but then again I have done crazier things.

First time Whole Smoked Turkey - turned out pretty well!

The wife and I decided to smoke a whole turkey for a belated Canadian Thanksgiving. Started out with a 14lb bird and hit it with a rub. Put it into the smoker at 265 for just shy of 6hrs for an internal temp of 170. I smoked with a combination of Hickory and Mesquite for 4hrs and then just...

    Tonights Baby Backs with q-view

Here is a pic of the smoker now. You can see the air hole part way up the door. There is a stainless cover that pivots to the side for adjusting air flow. It is a little hard to see in this light.

Will certainly do that Dave. Will pop a quick picture here and maybe start another thread. Going to see if I still have a picture of the smoker when I first got it to show where it has come from till now.

    Tonights Baby Backs with q-view

Well .. I modded the smoker again .. added a 2.5 inch hole for fresh air intake on the front door of the smoker. Made a flap for it so I can adjust the opening size to control the air flow .. worked like  a charm. I can now get the temps down to a constant 225 by tweaking the flame a wee little...

    Tonights Baby Backs with q-view

Thanks Dave. I will look into a needle valve for sure. The burner is out of a turkey fryer and the hose is showing signs of age so I am looking at this for a replacement: http://www.summitcampinggear.com/campchefhpadjustablereg-hose36.html Would a needle valve be needed in addition to the...

    Tonights Baby Backs with q-view

Did up 2 1/2 racks of back ribs tonight. Probably some of my best ribs yet. Wife loved them when I took a rack to work for her supper. - Nothing like tormenting co-workers Smoked them with hickory and a tweaked memphis dust rub. They were on the smoker for about 4 1/2 hrs. Temps running 240...

My latest smoker mod - Its got wheels now!

Here is a pic of a mod that I just completed on my smoker .. I used took an old propane bbq that I got for free and removed the bbq. Added angle iron supports for the smoker to sit on, raising the bottom of the door up to about 14 inches from the ground. Bolted the uprights to the smoker and...

A few things I learned during yesterday's pork loin smoke.

A week or so I posted asking for some help with my wood dust/chip pan catching fire. There were a lot of good suggestions so yesterday, I had a chance to give them a shot. I raised the pan 1 1/2" higher above the propane burner.  This made no difference, still caught flame. I used chips...

Chip Pan catches fire on home built propane smoker - need a bit of help please.

Thanks doctord and plj I have some of the tin left over from an old chimney. I may try fitting it into the pan with a little creative hammer work to see if I can get it to seal better than the lid to effectively choke the air supply. Never know, it may work out. If not, nothing lost but a bit...

Chip Pan catches fire on home built propane smoker - need a bit of help please.

Thanks Dave. The AMNPS is on the wish list - hopefully in the near future. Chef Jimmy. I will give it a try raising the pan up some and see what happens. Chunks are a good option as well. I have some here to try as well. Thanks for the input gents. Bill

Chip Pan catches fire on home built propane smoker - need a bit of help please.

I have a home built propane smoker that I bought used last fall. It was electric, using a hot plate for the heat source. This summer, I converted it to propane using an old turkey fryer burner for the heat source.  The cabinet is aprox 23x23x36 inside dimensions with insulated walls, door and...

First Attempt at smoking Cheese with Qview.

Thanks guys. This block is almost all gone and was mighty tasty. The second run which was a week ago consisted of 5lbs total using med. cheddar, old cheddar, mozza, colby and gouda. All is hidden away aging for a while.  Gave them about 5 1/2hrs of smoke this time around and used a far larger...

First Attempt at smoking Cheese with Qview.

Thanks Husker. My buddy called it the Red Neck smoke generator when I sent him a pic of the setup lol .. it was pretty simple, but it did work. Had to move the dust around about every 1/2hr, but that was ok. It seemed to put out a fair amount of smoke and it let me keep an eye on things they...
