    Chicken Leg Quarters (q-view)

Dinner time! I'll let you know how it turns out after we slice the tri-tip! Edit: It turned out great! Fell off the bone and really good flavor too. I'll use more wood chips next time for a bit more flavor.

    Chicken Leg Quarters (q-view)

Almost 3 hours in and things look good still. I'll up the temp to 300 in the last 30 mins or so to get the skin crispy as we like it :) More pics when I pull it from the grill in an hour or so...... Don

    It's almost 11:30am ...... time to drop the tri-tip!

It's time for another tri-tip and it just so happens I have one in the fridge. I really am a fan of the simple when it comes to seasoning my meats, and I didn't treat this one any differently. Garlic salt and pepper then wrapped in saran wrap and placed in the fridge over night. I woke up early...

    Chicken Leg Quarters (q-view)

I've got the day off today so I decided I might as well cook up somethin' delicious for lunch. I had one 3lb tri-tip left and my lovely SWMBO (she who must be obeyed) picked up some chicken leg quarters on sale at the store the other day when they were on sale (I've never cooked leg quarters...

That steak looks really good! Gonna have to try one in the smoker, and that mac and cheese looks awesome good too. Hopefully the search function will turn up a recipe on it for me :)

    First Tri-tip, turned out great!!

After doing a little bit of reading here on the forums, I went down to Safeway and picked up some Tri-tip. It turns out it was on sale for $3.99 a pound (almost half off), so I decided to grab a little more than I normally would. Garlic salt and pepper were the only seasoning I used, no "rub"...

Thanks for all your help everyone! I didn't manage to take any pictures as I was so busy running around the party but I just wanted to let you know things came out great. We ended up having a few folks over for the party who are originally from North Carolina. It was nice to have them ask to...

First shot @ pulled pork this weekend .... am i forgetting anything

Hey All, I've spent the past day or so reading up on all the 'stickies' and other threads I can find about folks smoking up some butts for a pulled pork feast. It's my daughters 4th birthday this weekend and I'm planning on trying out something in addition to the ribs and chicken I've been...

    2nd smoker..........

Hey all, I've started my research into the next smoker I want to purchase as I recently gifted my smoker to a good friend. The smoker I was using was a Master Forge vertical smoker/grill that I purchased from lowes for $59 a few months back. I did a few upgrades and after a bit of trial and...

    Scarbelly Wings (Buffalo Style)

Did my own variation on these (no injections) and used a 'hotter' seasoning then the creole the recipe calls for. Some of the best wings I've ever made ..... can't keep them in the kitchen LOL Thanks to the OP for a great recipe/starting point! Don

    Ribs (and chicken wings) Q-View

I've been lurking for a while and figure it's time to share some of my Q-View with you all. This was my 3rd attempt at using my new smoker (cheap $80 unit from lowes). On the previous runs I'd been using lump charcoal but this time decided to try some Stubbs briquettes .... seemed to work well...
