    Jalepeno Elk Sticks

Thanks guys, I took them on a backcountry ski trip to the mountains and they were a hit. Such a difference from the fatty store bought sticks.

    Jalepeno Elk Sticks

Thanks! Cherry & Hickory blend. I thought they might come out smokier based on the color but they were very smooth. I took extra pics just for SMF!

    Jalepeno Elk Sticks

I don't see these lasting long! Moist with a dry snap! Perfect! I just wish I made 50 lbs instead of 10. Light smoke, light saltyness, nice spice and garlic flavor. I did a 5 min cold bath, dried them off well and bloomed in a paper bag in the fridge for 24 hrs. My finest sticks to date...

I can't get snack sticks right for the life of me.

Thanks smoke boss! I'm smoking some elk sticks right now and I think I'll pass on the ice bath this time to see how it comes out. http://www.smokingmeatforums.com/t/244761/jalepeno-elk-sticks

    Jalepeno Elk Sticks

With a freezer full of elk meat and a full calendar ahead of hikes & fishing trips, it was time to make some snack sticks. 10 lbs I had some collagen casings (21mm) in my bin that were maybe two years old so I didn't know if they'd hold up but luckily for me they did just fine. The meat was...

I can't get snack sticks right for the life of me.

So you don't ice bath your sticks anymore? Just put them in a bag in the fridge? I'll have to try that.

    Pulled Pork Lives On

What a wonderful thing Smoked Pulled Pork is. It's not hard to achieve the best pulled pork you've ever consumed by making it yourself. I raise my glass to SMF and the SMF community for taking up hours of my day roaming over the great posts of infinite wisdom and trials in the world of smoking...

Question about Smoking Fish, Can you smoke Walleye?

Walter is some of my favorite fish to eat, though I've never smoked any, but I'd imagine it would be Delicious! My brother makes a cheesey potato caseroll out of walleye, bass, etc and he swears by it. I'll have to get the recipe but I'm sure it's pretty simple. Let us know if you smoke some...

    Northern Pike Brine and Smoking

I love the taste of pike. Tinfoil bake or smoke, stuffed with butter, onions, herbs, etc until the whole spine and bones pull out with one full swoop. We also pickle a lot of pike and that dissolves the bones. Tough to beat pickled pike!

SMF Friends . Whats Cooking This Weekend ? Post here!

I did make the dough. I coworker gave me some sour dough starter and I've been making all kinds of things with it. Pizza dough came out great. If you're looking for a nice summer pizza and something different, try this. It's surprisingly delicious.
