    The problem with your idea is the charcoal grate sits to low in the cooking chamber. The tuning plates should be position above the opening of the fire box in the cooking chamber.

    Not sure I could say you can taste the captain morgan. This is the first time I used the captain on pastrami, I been using it with Beff Ribs  with great results so I gave it a try. This is the best tasting pastrami I made so far, it has a very BOLD Pastrami taste..

    How sure are you of the temp at grill level? 245 is a little high do not that high.  I do 225 and it work ever time.

    Beef Ribs today!!! w/qview...

    I do them 90 minutes, 45 minutes, 45 minutes   3 hours total, not fall off the bones just enough tug.
