Finally some good weather here are the pics you asked for if you need more or have questions just let me know. And some nice Q-view from last nights smoke. 3 slabs and some country style boneless.
Here are some ribs I did on my weber 22 kettle. I did the loaf pan with apple juice over the side with the coals and just dropped wet applewood chips in about a handful every hour that kept a nice easy smoke going be sure to use a small amount of coals and keep adding you dont want to get over...
If your doing all wood smoking many guys that have your set up or brick pits keep a seperate firebox going (like a kettle grill) so that their only adding coals to the smoker firebox in essence their letting the logs burn off all that extra smoke in the other area and when their glowing orange...
Hey good luck, I'm still a rookie myself but wasn't everybody once. I built a UDS and I love it, So much actually that I have held off on building the 22" WSM sitting in my garage its still in the box. Let the BBQ wars begin!!!!!
I will post more pics of the UDS and the heat shield and how its attached. I used the same blots I'm using to hold the grates only 3" long so I can have about 1 3/4" between the drum and the shield that allows for the heat to defuse and not transfer to the shield ( made from 1/2" expanded metal...

This is the new UDS i built with all the help and great posts from this site. Check out the heat shield so my little guy doesn't run into it and get burned and it actually really does work doesn't get hot even when I had it running at 325-350 best Mod I did was this. Just a little insurance I...
I do agree with you unfortunately the only place I found close to me to sand blast them wanted 40 bucks so that's why I kept up the burn and scrub method worked well for me.

My BBQ...
Hello, please bare with me for I am new to this. I just built my first UDS and feel compelled to pay it forward, for your site was invaluable to me and my efforts. I live in one of the largest cities in the US Chicago and you would think getting a 55 gallon drum would be easy "well its not" at...
