All I do to mine is brush the grates when they get too much build up.
After each smoke, while it's still warm I clean the temp probes and window with alcohol and paper towels. Cleans up really easy.
Looks great! I love doing chicken in my MES. My best results are to take it out of the smoker when it hits an internal temp of 140, then throw it on a hot grill to finish and crisp up the outside a little.
My supply of Oster Jerky Seasoning is almost out, and since it's no longer manufactured, I need to find a replacement. I always add my own seasonings along with the packs, so I'm trying to find something that tastes similar to the Oster brand, so that my recipe will still work. Any suggestions?
Bear makes a good point about it possibly being a bad controller. My first MES had one that was way off. Masterbuilt was great about sending a replacement controller right out to me. But like he said, you really won't know until you put a reliable thermometer on it. Best of luck! Once you get it...
I think you made the right choice going with the MES 40. My guess is that by running it at 275 for 3 hours, you got a lot of heat built up in the insulation/body, and that's probably what kept the temp rising on you. I've made jerky in mine before and never had a problem holding low temps. I...
I won't smoke without pellets. I love them. Great flavor and SO simple. The pellet smoker from Amazen is wonderful. I haven't even used chips in my last 2 MES'. My personal preference is the Pitmasterblend pellets.
You might want to open the vent all the way, and cover your water and drip pans in foil. The first time I ran my MES' I sprayed the inside with Pam too. Enjoy!

I've had great results with a buttermilk brine, with a tbsp of poultry seasoning added. Then smoked with Pitmaster's Choice pellets (Hickory/Cherry/Maple).
