Happy Thanksgiving guys, I fried a turkey for the first time today. I brined it overnight with water, salt, and brown sugar. It weighed 12 pounds and I fried it for 44 minutes. Came out great. Best turkey I ever had.
I am having problems with Butts and Brisket. I think the problem might be the placement of the thermometer. I usually stick it in the center of the cut of meat and have the whole thermometer inside the meat. When i look at the pictures on the forum i notice that some people have theirs...
Good news and bad news. The chicken smelled great and looked insane, until i sliced into it. I had the Maverick (which was just calibrated) in the breast and it read 165. I sliced it and the breast was completely pink on the inside, and i dont mean a little pink i mean completely raw. I must...
I recently bought the Char-Broil The Big Easy Oil-Less Infrared Turkey Fryer from the Home Depot and im going to use it for Thanksgiving. I am doing a trial tomorrow with a roaster chicken to see if i have the right mixture for the

After doing some running around today i fired up the WSM for the first time in a little while. Been busy with work the last few weeks.
I smoked a fattie stuffed with ground chuck, montery jack cheese, small hot dogs, onions and potatoes.
The ABT was stuffed with cheddar, cream cheese, garlic...
Thanks for all the responses. I have a good amount of tools including drill bits but I'm not sure of what type of screws/bolts to use that are safe with high heat and cooking. When it comes to stuff like that I'm clueless.
On another site i saw a picture of a WSM with three racks on it. I could do the MOD using screws, bolts and washers. I am not really too handy and was wondering if there is any certain kind i should buy at home depot. Obviously zinc plated is out but would any of you guys know which to get...

Hey guys. Finishing my basement so the plumber had to come today. That means a day off for me. While i'm home i figured why not do a little smoke.
Bought a 2 1/4 pound chuck roast and a chicken fryer.
Rubbed chuckie with olive oil and some rub.
Brought smoker to 220 and laid the chuckie on...
