    Try both ways, soaked and dry. See what u come up with. That's the great thing about BBQ, no matter what you do chances are you'll have something good to eat in the end

    You're going to have a bunch of real estate to cook on. That smoker is huge. Looks good!!! I see a welder in the picture and in your post. I've been trying to find a welder to buy that I can plug in to a regular wall outlet. I think that's 15 amp?? Not sure... Advice, suggestions, anything...

    That should be fine. I've gotten advice from other bbq'rs (don't Kno if bbq'rs is a word LOL), don't get to hung up on times. I've heard people say that it's done when it's done. Keep that ️ handy and probes if u got it. Some cuts take longer than others. Slow and low!!
