Just a quick up for those considering the same.
I went with a Weber Performer deluxe due to aftermarket support, speed to get fire going, and the variety of things it can do.
It was not cheap but certainly saved a lot of time and headaches.
Just did this tonight and they were great. I used a slow n sear on my kettle with apple and cherry. Started at 225 then moved to 250 as I got impatient, they were much better than hot and fast over flame.
