    Anyone have a suggestion for removing the larger bung on the cover? I purchase a bung tool...unsuccessful. If I can't get it off I guess I will make some holes to attach some pipes and elbows for exhaust vents.

    QUESTIONS for you MES30/40 users

    I have a MES 40 and use the AMNS. I remove the chip tray and pull out the chip loader various lengths from an inch to almost all the way out. I adjust as I feel the need to control the smoke. The top vent is wide open. No water tray. I have had no problems keeping the AMNS lit.

    As previously stated, I am looking for stainless u-bolts to help attach the charcoal expanded metal to the charcoal grate. As another option, would anyone suggest using stainless self locking ball locking cable ties? Any challenges doing it this way?

    Hardware Question for UDS

    In the beginning phase of developing my UDS. I am starting to acquire the hardware needed. Regarding the bolts, washers and nuts, do I need to use stainless spells or can I get away with standard materials. Just concern with the heat and the effects on the meat and possible smoke. Thanks

    Pulled at IT 185. I let the pastrami rest for an hour before putting it in the fridge. Going to enjoy it this evening. Now to steam or not before serving. Any suggestions? Finally picture upon slicing. 128077

    The "pastrami" went into the smoker at 9:30 AM. At 7:15 PM an IT of 165 was reached. Wrapped in butcher paper and Place back in the smoker. I will pull it out at 185. Hopefully after 10:00
