I already have a UDS and an reverse-flow I do most my smoking in. This is more for fun, I get a lot of enjoyment out of turning garbage into something functional.

I had this question answered yesterday and if the source is correct, galvanization doesn't off-gass until it hits 392 degrees Fahrenheit, so temps below this should be fine. I've known people to use galvanized duct on all their smokers and never had any problems.
