It doesn't feel plasticine. Feels smooth, almost just like the metal itself. I'm concerned it's an enamel, which idk if a fire would remove.

I wonder if it'd be a better idea with a subsequent smoker to store it in the shed (recent acquisition as we moved a few months ago, didn't have that at the last place). Probably also need to be more diligent about cleaning it after use (oftentimes it's late, tired, long day, etc).

Tested the thermometer with the tip submerged in boiling water on the stovetop. Registered around 175 in boiling water?

It sounds like I need to test it. When I got it, I was told that the thermometer was pretty accurate (I know they typically aren't THAT accurate). Anybody know a good, reliable method to test this?
I bet that was the issue. Had a buddy come and watch the stuff for me while I had to leave for a while, and when he foiled them, no liquid. Is that what caused it?

I've got a guy building a UDS for me, and I selected to have only one grill grate put in. He can add another below it, but I wasn't sure if it was necessary. Have I done this wrong? Should I change my request?
