    Brisket with Mopping Sauce

Doing another brisket this weekend so I ordered this bad boy off Amazon for $13. It has a plastic mop that you can unscrew and toss in the dishwasher. I'll post pics of tomorrow's cook in this thread as well (unless you guys think I should start a new one, I'm fairly new to the forums and don't...

    Brisket with Mopping Sauce

Turned out moist and toothpick tender. The flavor was great though next time I'll go with less sugar and more vinegar in my next mop sauce. Plan on chopping the rest of the point and flat to go with eggs for breakfast tomorrow. I have stopped wrapping my brisket for awhile now, prefering to...

    Brisket with Mopping Sauce

I've finally gotten comfortable enough with smoking brisket to feel like I can try something new. I found this slab on sale at Cash 'n Carry for $2.50/lb so decide it was time to experiment. I loaded the Traeger with Texas Mesquite pellets from Bear Mountain and fired her up to 225 degrees...

    The Ultimate Rib Sandwich

So today I had a potluck dinner with my extended family. As the smoker enthusiast of the family I was asked to bring a meat dish. This is what I ended up with. I used the 3-2-1 method for 2 racks of ribs on my traeger, each where coated in Memphis Dust and smoked using hickory pellets. I...

    First Pastrami

Went to Cash-n-Carry to buy some pellets and they had a sale on corned beef full packer brisket. So like any pastrami loving, rueben sandwich craving smoke enthusiast I decided now was as good a time as any to try my hand at Pastrami. So I soaked this 14 lbs of brine-saturated perfection...

Catered My Own Wedding, 150 Guests

So boys, it finally happened... I'm a married man. We said 'I Do' this last Sunday. It was the single most Happy/Stressful day of my life. A lot of that stress came from the fact that I had made all the food and this was my first time cooking for more than 20-30 people. The Thursday before...

    Fathers Day/Game 7 Pork Fajitas

Ended up great. Shredded the pork and mixed it with the veggies. Hit it with some cheese and fajita sauce to finish. Tasted great and was a real treat.the wife thinks this is her new favorite recipe.

    Fathers Day/Game 7 Pork Fajitas

Added some onion and bell peppers to the mix. Pulled the pork back out of the tin to let it firm up and to let the veggies cook down.

    Fathers Day/Game 7 Pork Fajitas

Time for an update. Decided to forgo a glaze and instead threw some Salsa Verde in the foil pan along with some lime juice and cilantro. Made some beer brats for lunch and threw some of the reduced beer and sausage grease in because... Why not?

    Fathers Day/Game 7 Pork Fajitas

Throwing on a 9 lb bone-in pork shoulder roast to make fajitas with when the game starts. Part of my gift to both my father and my father-in-law who is in town for the weekend. Used McCormicks faqita/taco seasoning for the rub but I'm in need of a glaze to put on after we get back from church. I...

First Brisket (and I have questions)

The brisket was so good it didnt last long enough for me to take photos of the finished product!!! Very juicy. Great smoke flavor. Next time I may pull it a little sooner, or try and avoid the long time spent in the cooler, because it was fall apart tender when I went to cut it.

First Brisket (and I have questions)

Here it is in all its glory. Got home to find it at an IT of 207. Its now foiled, wrapped in towels and in a cooler for the next few hours. Money shots to come!

First Brisket (and I have questions)

Quick pic of it going on the smoker. I'm using a mix of cherry and mesquite. There is some mesquite in my cheap-o char-griller smoke tube to help generate more smoke during the first few hours of the cook.
