Extreme cold and windy weather questions

First smoke on the Camp Chef and it’s 4degrees here. I used a packing blanket on the lid and the temps are holding between 215-240 degrees. I know some folks swear by the welders blankets to hold in heat as well. Good luck!

    Cleaning MES 40

Best way to clean the window that I've found: Get a Magic Eraser and a bowl of warm water.  Put the Eraser in the water and don't wring it out.  Use the Eraser on the window and it comes right off!  No vinegar or anything required!!  It's a little messy, but cleans up pretty quick.  I leave the...

    Maverick 733 & MES 40

Got my new Maverick yesterday and did a butt overnight. There seems to be a 30 degree difference between the MES and Maverick (733 reads lower). Has anyone else experienced this?? Meat probe is only 3 degrees off. Probe is clipped right next to the meat.

    First Poultry Smoke in MES

Great looking bird!!  I put my AMNPS all the way on the bottom to the left (as your looking at it) of the heating element right under the drip pan.  I've smoked just about everything in my 40" MES and have had ZERO problems with the AMNPS in that spot.  Just a suggestion.

    MES 40 Rack Question

Hey everyone!  I had a question about the racks in the MES 40.  Most of the post have you put the meat on the top two racks.  Can you cook on all five racks?  If so, do you have to rotate the racks for even cooking?  Just curios

    Where does Pellet smoker go???

Thanks guys.  I put it on the bottom left of the smoker.  Ribs are in and I have a light smoke coming out of the vent.  I didn't pull the chip tray all the way out, but pulled it out quite a bit.  Also pulled the loader out about two inches.

    Where does Pellet smoker go???

Hey folks, Getting ready to use the amnps for the first time in my MES 40.  Where does everyone put the tray???  The only place I can see is on the very bottom of the smoker to the left.  I know I have to pull out the chip tray a little bit and the chip loader for air.  Additionally, I know to...

    Chicken Thighs (MES 40 Smoked)

Bear, is there a reason you don't put the chicken right on the grate?  I'm trying this for the first time this weekend and I have the same smoker and amnps as you.  First time doing it, so any tips would be greatly appreciated!!  Thanks!  Brad

    Greeting from Virginia

Joe, it's going to be nice here this weekend (VB) so I'm going to do ribs on Saturday and chicken Sunday.  Rib question for you: last time I did the 3-2-1 and they turned out just OK.  I'm thinking about doing them this time just straight, so put them in at 250 with rub and let them go until the...

    Smoking Thighs question

Hey everyone!  Going to make my first attempt at smoking thighs this weekend in my MES 40".  I was wondering if anyone could offer some advice on times and sauce?  I'm going to use Jeff's rub on them after the brine, but I haven't seen a temp or time that I can use.  Doing ribs on Saturday, but...

    Greeting from Virginia

My name is Brad and I got a 40" MES for Christmas.  I have only smoked a rack of ribs in it so far and they didn't turn out to bad.  The smoker was VERY moist, but I saw from reading a bunch of posts that I should NOT put water in the pan.  Going to try and do some chicken quarters this...
