    Smokin-it 3 footprint

I'm looking at this smoker and like the idea of setting on a craftsman toolchest. Question is, what is the outside dimensions of the feet? I have a 24" chest that is 24x13 on top. This is the next size down from the 27" that someone posted pictures of, but it looks like a fair bit of room left...

    LET'S TALK BRISKET!!

The reason I haven't liked my briskets so far is because they DON'T fall apart when sliced. I finally got one the way I wanted by accident last night. "Done/Correct" to me is when it's sliced 1/4 thick, it flakes apart with a fork. If picked up horizontally with tongs, it would pull in half. You...

Lost my beef roast rub recipe

I thought I bookmarked it, but I guess I didn't. I think it was Chef Jimmy's but not sure. It had rosemary, that's the one thing that sticks out in my mind. Plus the basics, salt, cbp, onion, garlic, etc. maybe paprika, maybe cumin, maybe cayenne. I've searched for 3 hours now and can't find it...

How is brown sugar measured in Q recipes?

I don't really care for sweet + meat in any fashion, but figured I'd try a few and hope the sweet cooked out/off and adjust the recipe on later cooks as needed. For the search feature working "really good" I disagree. It works, but not well. I've spent more hours cruising search results than I...

How is brown sugar measured in Q recipes?

Tons of recipes calling for brown sugar. But I'm not used to brown sugar in anything except baking. Baking recipes are specifically called out as a PACKED cup, Tbsp, etc. Occasionally there will be a SIFTED measurement, but again always specified. So are these great sauce, rub and brine recipes...

Wife wants smoked prime for Valentine's day.

No one mentioned tying it up. I tie all my rib and rump roasts. Makes a more uniform cook and helps keep the juices in. here's a good how-to video.

Filtering smoke - bubbling smoke through water?

You could use a moonshiner's worm to cool the tubing from the outside. Make a copper coil and fit it in a bucket, then fill the bucket with ice water. It's going to make a pretty good mess inside the copper tube though. Make sure it's small enough you can get it in the sink or build an adapter...

    Issues with my Auber PID

Can't speak on the controller. On the extension cord assuming perfect incoming 120v power, 50' #12 is as small as you can go and stay under 3% voltage loss. Additionally, I assume the controller is consuming a small bit of the power. Industrial controllers do. Meaning if fed 110v to controller...

    iCelcius wifi temp probe review

Very little info available on this probe, so I made a video review. And a pic reading boiling water. This is my first temp probe, don't know if 2 deg low is typical or not.

    AMNPS ... I Give UP

I'm new to playing with the AMNPS also, I'm just east of Stillwater. I think I know what your problem is... You're a Sooner fan. I didn't try and look back through your previous posts. Are you against a separate box for the pellet tray? I didn't really like the looks of the mailboxes (just me...

    8 Electric Meat Grinder — 575 Watts

Looks IDENTICAL to my LEM Model 1113 (the old #8 countertop). I've put about 30 grisly Oklahoma deer through that thing.

    Wifi Meat Thermometers

I just ordered the iCelcius Duo, but haven't received it yet. It's a little over $100. Download the app and check it out, there's a demo loaded on it.

    The one that got away

I was watching this last night trying to decide if it was worth driving to Kansas City to pick up. One of my kids woke up about the time the auction was closing and I never got to bid. Sold for $14.00. I was heart broken. Stainless inside and out. Motors, fans and compressor had been removed...

If there can be wine snobs, why not wood snobs?

Hickory has a bolder taste than mesquite to my palate. Almost a bite to it, like sharp cheddar compared to plain. I'm told I'm in the minority with this opinion. Down here mesquite is THE way, even though it's 150+ miles south to find any growing. I didn't have hickory smoked anything until I...

    Kelvinator--going for full electric control

Doesn't look like Engineer has been on in a long time. Wonder how this ever turned out... To turn on/off smoke without cutting off the air supply to the smoker: With an external smoke box (automated however you wish) and a tube that connects the smoke box to cook box. Picture 2 tubes stacked on...

Add a smokebox without modifying a Cookshack Original (and a Qview)

The mini fatties turned out OK. A but too much smoke for my liking, but the wife and kids loved it. Most of the cheese stayed in even though I didn't layer it correctly. Can't wait to get an AMNPS in a separate box where I can control the smoke a little better.
