When I moved to South Carolina a few years ago (from OH/WV), I had never heard of a mustard based sauce. It is now one of my favorite sauces.

Great post. I've lived in the Midwest of Ohio (home state), the mountains of West by God Virginia, and now South Carolina. Believe it or not, everywhere is different, but that's what makes it awesome.
Thank you all. First ribs that I have ever smoked. They exceeded my expectations. The only way to get better is to listen to others and smoke lots of meat.

Here they are! I didn't foil,spritz, or put sauce on them. I wanted to try ribs just thrown and forgot about. They turned out good. I prefer less bark so I will foil them next time and add sauce.

Haven't fired up the mini for a couple months. Decided some Baby Backs were in order.
Mini is rolling with Royal Oak lump and hickory chips. Chips are not working great. They burn too fast. I have it noted to start using chunks.
Shooting for a pit temp of 225-250.

Did some upgrading today. Added a second ball valve and riveted the lid to the bottom of the pot. Still want to add another cooking rack and add latches to make it all one unit.
